For the Crust:
- 3 ripe bananas, mashed
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup chopped walnuts
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1/2 cup buttermilk
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a bowl, cream together butter and sugar. Beat in eggs one at a time, then stir in mashed bananas and vanilla.
- Combine flour, baking soda, and salt; gradually mix into banana mixture. Stir in buttermilk until smooth. Fold in walnuts.
- Pour batter into prepared pan. Bake for 60 minutes, or until a toothpick inserted comes out clean. Cool in pan for 10 minutes, then turn out onto a wire rack.
