Banana Pecan Caramel Layer Cake

A decadent layered cake featuring ripe bananas, toasted pecans, and rich caramel frosting.

For the Crust:

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1/4 cup buttermilk
  • 1 tsp vanilla extract
  • 1/2 cup chopped pecans, toasted
  • 1 cup caramel sauce
  • 1 1/2 cups heavy cream
  • 1/4 cup powdered sugar

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. Whisk together flour, baking soda, and salt in a bowl. Set aside.
  3. Cream butter and sugar until light and fluffy. Add eggs one at a time, then mix in mashed bananas, buttermilk, and vanilla.
  4. Gradually add dry ingredients to wet ingredients, mixing until just combined. Fold in toasted pecans.
  5. Divide batter evenly between prepared pans. Bake for 25-30 minutes or until a toothpick comes out clean. Cool completely.
  6. Whip heavy cream and powdered sugar to stiff peaks. Assemble cake by layering with caramel sauce and whipped cream between each layer.
  7. Drizzle remaining caramel sauce over the top and garnish with additional pecans if desired.
