For the Crust:
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 3 ripe bananas, mashed
- 1/4 cup buttermilk
- 1 tsp vanilla extract
- 1/2 cup chopped pecans, toasted
- 1 cup caramel sauce
- 1 1/2 cups heavy cream
- 1/4 cup powdered sugar
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
- Whisk together flour, baking soda, and salt in a bowl. Set aside.
- Cream butter and sugar until light and fluffy. Add eggs one at a time, then mix in mashed bananas, buttermilk, and vanilla.
- Gradually add dry ingredients to wet ingredients, mixing until just combined. Fold in toasted pecans.
- Divide batter evenly between prepared pans. Bake for 25-30 minutes or until a toothpick comes out clean. Cool completely.
- Whip heavy cream and powdered sugar to stiff peaks. Assemble cake by layering with caramel sauce and whipped cream between each layer.
- Drizzle remaining caramel sauce over the top and garnish with additional pecans if desired.
