For the Crust:
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 3 ripe bananas, mashed
- 1/4 cup buttermilk
- 1 tsp vanilla extract
- 1/2 cup chopped pecans
- 1 cup caramel sauce
- 1/2 cup heavy cream
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.
- Whisk together flour, baking soda, and salt in a bowl. Set aside.
- Cream butter and sugar until light. Add eggs one at a time, then mix in bananas, buttermilk, and vanilla.
- Gradually add dry ingredients to wet mixture. Fold in chopped pecans.
- Divide batter evenly between pans. Bake for 25-30 minutes or until a toothpick comes out clean.
- Cool cakes for 10 minutes in pans, then transfer to wire racks.
- For frosting: Whip cream cheese until smooth. Add powdered sugar and 1/4 cup caramel sauce, then slowly mix in heavy cream until fluffy.
- Assemble cake by spreading frosting between layers and drizzling with remaining caramel sauce.
