Banana Pecan Caramel Layer Cake

A decadent layer cake featuring moist banana cake, crunchy pecans, and rich caramel frosting.

For the Crust:

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1/4 cup buttermilk
  • 1 tsp vanilla extract
  • 1/2 cup chopped pecans
  • 1 cup caramel sauce
  • 1/2 cup heavy cream
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.
  2. Whisk together flour, baking soda, and salt in a bowl. Set aside.
  3. Cream butter and sugar until light. Add eggs one at a time, then mix in bananas, buttermilk, and vanilla.
  4. Gradually add dry ingredients to wet mixture. Fold in chopped pecans.
  5. Divide batter evenly between pans. Bake for 25-30 minutes or until a toothpick comes out clean.
  6. Cool cakes for 10 minutes in pans, then transfer to wire racks.
  7. For frosting: Whip cream cheese until smooth. Add powdered sugar and 1/4 cup caramel sauce, then slowly mix in heavy cream until fluffy.
  8. Assemble cake by spreading frosting between layers and drizzling with remaining caramel sauce.
