Banana Pecan Cake

A deliciously moist banana cake loaded with crunchy pecans for the perfect balance of flavors and textures.

For the Crust:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans
  • 1/2 cup buttermilk

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in mashed bananas and vanilla.
  4. Gradually mix in the dry ingredients alternating with buttermilk, beginning and ending with the dry ingredients. Fold in pecans.
  5. Pour batter into prepared pan and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  6. Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
