For the Crust:
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 3 ripe bananas, mashed
- 3/4 cup granulated sugar
- 1/3 cup melted butter
- 1 egg
- 1 tsp vanilla extract
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 tsp cinnamon
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a bowl, mix flour, baking soda, and salt. In another bowl, combine mashed bananas, granulated sugar, melted butter, egg, and vanilla.
- Gradually add dry ingredients to wet ingredients, stirring until just combined. Fill cupcake liners 2/3 full.
- In a separate bowl, beat cream cheese, powdered sugar, and cinnamon until smooth. Drop a spoonful onto each cupcake and swirl with a knife.
- Bake for 20-25 minutes or until a toothpick comes out clean. Let cool before serving.
