Irresistible Banana Caramel Roll Cake

A decadent roll cake filled with creamy banana filling and drizzled with homemade caramel sauce.

For the Crust:

  • 3 large eggs
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup powdered sugar (for dusting)
  • 2 ripe bananas, mashed
  • 1 cup heavy cream
  • 1/4 cup caramel sauce (homemade or store-bought)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line a jelly roll pan with parchment paper.
  2. In a large bowl, beat eggs, sugar, and vanilla until light and fluffy.
  3. Sift in flour, baking powder, and salt. Gently fold until just combined.
  4. Spread batter evenly into prepared pan. Bake for 12-15 minutes until lightly golden.
  5. Dust a clean kitchen towel with powdered sugar. Invert cake onto towel and carefully peel off parchment paper.
  6. Roll cake gently in the towel while still warm. Let cool completely.
  7. Whip heavy cream until stiff peaks form. Fold in mashed bananas.
  8. Unroll cake, spread banana cream filling evenly, then roll back up without the towel.
  9. Drizzle with caramel sauce before serving.

Notes
