For the Crust:
- 3 ripe bananas, mashed
- 3 large eggs
- 1 cup granulated sugar
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1/2 cup caramel sauce
- Powdered sugar for dusting
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line a jelly roll pan with parchment paper and lightly grease.
- In a large bowl, beat eggs and sugar until light and fluffy. Add mashed bananas and vanilla extract, mixing well.
- Sift flour, baking powder, and salt together, then fold into the banana mixture until just combined.
- Spread the batter evenly into the prepared pan. Bake for 12-15 minutes or until the cake springs back when touched.
- While warm, turn the cake onto a clean kitchen towel dusted with powdered sugar. Carefully peel off the parchment paper and roll the cake with the towel. Let cool completely.
- Whip the heavy cream until stiff peaks form. Gently fold in the caramel sauce.
- Unroll the cooled cake, spread the caramel cream evenly, then roll it back up without the towel. Chill for at least 1 hour before serving.
- Dust with powdered sugar before serving.
