Banana Bread Cookies

  • 1/2 cup unsalted butter (room temperature)
  • 1/2 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 1 cup mashed banana (about 2 bananas)
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all purpose flour
  • 2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp nutmeg (optional)
  • 1/4 tsp salt
  • 1 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit. Line a baking sheet or two with parchment paper or a silicone liner and set aside.
  2. In a large bowl, mix butter, brown sugar, and granulated sugar together for about 1 minute until smooth. Add mashed banana, egg, and vanilla extract, stirring until combined.
  3. In another bowl, combine flour, cinnamon, baking powder, baking soda, nutmeg, and salt. Gradually add dry ingredients to wet mixture and stir until just combined. Fold in chocolate chips if using.
  4. Drop spoonfuls of dough onto prepared baking sheets, spacing 2 inches apart. Bake for 10-12 minutes until edges are golden. Cool on a wire rack.

Notes

Use very ripe bananas for maximum flavor and sweetness. The dough may be soft; chill for 15-30 minutes if it spreads too much. These cookies taste even better the next day as flavors meld.
