- 1/2 cup unsalted butter (room temperature)
- 1/2 cup brown sugar (packed)
- 1/2 cup granulated sugar
- 1 cup mashed banana (about 2 bananas)
- 1 large egg
- 1 tsp vanilla extract
- 2 cups all purpose flour
- 2 tsp ground cinnamon
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp nutmeg (optional)
- 1/4 tsp salt
- 1 cup chocolate chips (optional)
Instructions
- Preheat the oven to 375 degrees Fahrenheit. Line a baking sheet or two with parchment paper or a silicone liner and set aside.
- In a large bowl, mix butter, brown sugar, and granulated sugar together for about 1 minute until smooth. Add mashed banana, egg, and vanilla extract, stirring until combined.
- In another bowl, combine flour, cinnamon, baking powder, baking soda, nutmeg, and salt. Gradually add dry ingredients to wet mixture and stir until just combined. Fold in chocolate chips if using.
- Drop spoonfuls of dough onto prepared baking sheets, spacing 2 inches apart. Bake for 10-12 minutes until edges are golden. Cool on a wire rack.
Notes
Use very ripe bananas for maximum flavor and sweetness. The dough may be soft; chill for 15-30 minutes if it spreads too much. These cookies taste even better the next day as flavors meld.
