- 4 medium sweet potatoes
- 2 tablespoons olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and scrub the sweet potatoes thoroughly to remove any dirt.
- Dry the sweet potatoes with a towel and prick each potato several times with a fork.
- Rub each sweet potato with olive oil, then sprinkle with salt and pepper.
- Place the sweet potatoes on a baking sheet lined with foil or parchment paper.
- Bake in the preheated oven for 45 to 60 minutes, or until the potatoes are tender when pierced with a fork.
- Remove from the oven and let cool for a few minutes before serving.
Notes
For extra crispy skin, rub the sweet potatoes with a little more olive oil before baking. You can also microwave the sweet potatoes for 5 minutes before baking to reduce cooking time.
