- 3 Bartlett pears
- 1 tablespoon olive oil
- 1/2 cup blue cheese, crumbled
- 1/3 cup walnuts, chopped
- 4 sprigs fresh thyme, leaves removed (plus extra for garnish)
- 1–2 tablespoons honey
- 1/2 teaspoon red pepper flakes
- Flaky sea salt, to taste
- Freshly ground black pepper, to taste
- 1/2 cup mixed fresh berries (such as blueberries, raspberries, or blackberries)
Instructions
- Preheat oven to 400°F (200°C).
- Cut pears in half and scoop out the core with a melon baller to create a well in each half.
- Place pears cut side down in a baking dish or cast iron pan. Drizzle with olive oil and season with flaky sea salt and freshly ground black pepper.
- Bake pears for 15 minutes until slightly tender.
- Remove pears from oven and turn cut side up. Fill each pear half with crumbled blue cheese, chopped walnuts, and thyme leaves.
- Return to oven and bake for an additional 8 minutes until cheese is slightly melted.
- Transfer pears to a serving platter. Drizzle with honey and sprinkle with red pepper flakes, extra flaky sea salt, freshly ground pepper, and garnish with fresh thyme leaves.
- Top with fresh mixed berries before serving.
Notes
Use ripe but firm pears for best texture. Toast walnuts lightly before chopping for enhanced flavor. This dish can be served warm as a dessert or an elegant appetizer. Fresh berries add a bright contrast but can be omitted if unavailable.
