Baked Pears with Berries, Honey, Walnuts & Blue Cheese

Ingredients

  • 3 Bartlett pears
  • 1 tablespoon olive oil
  • 1/2 cup blue cheese, crumbled
  • 1/3 cup walnuts, chopped
  • 12 tablespoons honey
  • 4 sprigs fresh thyme, leaves removed plus more for garnish
  • 1/2 teaspoon red pepper flakes
  • Flaky sea salt, to taste
  • Fresh ground black pepper, to taste
  • Fresh berries (optional, for serving)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut pears in half and scoop out the core with a melon baller to create a well in each half.
  3. Place pears cut side down in a baking dish or cast iron pan. Drizzle with olive oil and season with flaky sea salt and fresh ground pepper.
  4. Bake pears cut side down for 15 minutes.
  5. Remove from oven, turn pears cut side up, and fill each well with blue cheese, chopped walnuts, and thyme leaves.
  6. Return to oven and bake for approximately 8 minutes until the cheese is slightly melted.
  7. Transfer pears to a serving platter, drizzle lightly with honey, and sprinkle with red pepper flakes, additional flaky sea salt, fresh ground pepper, and thyme leaves.
  8. Serve warm, optionally garnished with fresh berries.

Notes

Use ripe but firm pears for best texture. Toast walnuts beforehand for extra flavor. This dish can be served as a savory dessert or an appetizer paired with arugula and balsamic dressing if honey is omitted.
