- 3 Bartlett pears
- 1 tablespoon olive oil
- 1/2 cup blue cheese, crumbled
- 1/3 cup walnuts, chopped
- 1–2 tablespoons honey
- 4 sprigs fresh thyme, leaves removed plus more for garnish
- 1/2 teaspoon red pepper flakes
- Flaky sea salt, to taste
- Fresh ground black pepper, to taste
- Fresh berries (optional, for serving)
Instructions
- Preheat oven to 400°F (200°C).
- Cut pears in half and scoop out the core with a melon baller to create a well in each half.
- Place pears cut side down in a baking dish or cast iron pan. Drizzle with olive oil and season with flaky sea salt and fresh ground pepper.
- Bake pears cut side down for 15 minutes.
- Remove from oven, turn pears cut side up, and fill each well with blue cheese, chopped walnuts, and thyme leaves.
- Return to oven and bake for approximately 8 minutes until the cheese is slightly melted.
- Transfer pears to a serving platter, drizzle lightly with honey, and sprinkle with red pepper flakes, additional flaky sea salt, fresh ground pepper, and thyme leaves.
- Serve warm, optionally garnished with fresh berries.
Notes
Use ripe but firm pears for best texture. Toast walnuts beforehand for extra flavor. This dish can be served as a savory dessert or an appetizer paired with arugula and balsamic dressing if honey is omitted.
