Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, brown sugar, baking powder, salt, and cinnamon.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Toss the diced apples in a small amount of flour from the mixture to coat them lightly.
  5. In a separate bowl, whisk together milk, vanilla extract, and egg.
  6. Add the wet ingredients to the dry ingredients and stir until just combined.
  7. Fold in the coated apples gently.
  8. Drop large spoonfuls of batter onto the prepared baking sheet, spacing them apart.
  9. Bake for 15-18 minutes until golden and cooked through.
  10. While baking, prepare the glaze by mixing powdered sugar, milk, and vanilla extract until smooth.
  11. When fritters are almost done, brush them lightly with glaze and place under the broiler for 1-2 minutes to caramelize the glaze.
  12. Remove from oven, brush with remaining glaze, and let cool slightly before serving.

Notes

These baked apple fritters are best enjoyed warm but can be served at room temperature. The broiler step caramelizes the glaze for a crunchy finish. Using cold butter and coating the apples in flour helps achieve a tender texture with a crisp exterior.
