- 1 cup plus 2 tablespoons semisweet chocolate chips

- 1 teaspoon espresso powder or instant coffee, optional

- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 3/4 cup unsalted butter for frosting, room temperature
- 3 cups confectioners' sugar, sifted
- 3 to 5 tablespoons Baileys Irish Cream Liqueur
- 3/4 cup semisweet chocolate chips for ganache
- 2 tablespoons heavy cream
- 1/2 cup Baileys Irish Cream Liqueur for ganache
Instructions
- Preheat oven to 350°F. Line a baking pan with parchment paper and lightly spray with cooking spray.
- Melt chocolate chips and butter together in a microwave in 30-second intervals, stirring between each, or in a saucepan over low heat. Set aside to cool slightly.
- In a medium bowl, whisk together flour, cocoa powder, espresso powder, salt. Set aside.
- Once chocolate mixture is warm, add eggs one at a time, whisking constantly for about 10 seconds per egg to incorporate fully.
- Whisk in sugar, vanilla extract, and Baileys Irish Cream until combined.
- Fold the flour mixture into the chocolate mixture until just combined.
- Pour batter into prepared pan and smooth the top with a spatula.
- Bake at 350°F for 25 minutes or until the top is shiny and edges are set. Cool completely.
- For frosting: Beat softened butter at high speed until light and fluffy, about 3 minutes. Add powdered sugar and mix until incorporated.
- Add Baileys Irish Cream and mix until combined. Spread frosting over cooled brownies.
- For ganache: Heat heavy cream and Baileys in a small saucepan over medium heat until just simmering. Pour over chocolate chips in a bowl.
- Wait 3-5 minutes without stirring, then stir until smooth. Pour ganache over frosted brownies.
- Allow ganache to cool at room temperature before slicing.
Notes
Ensure eggs are at room temperature to prevent curdling when combined with alcohol. For a thinner frosting consistency, add additional Baileys one tablespoon at a time. This recipe is best served chilled or at room temperature.
