- 1/2 avocado, sliced
- 4 slices mozzarella cheese
- 4 cherry tomatoes, sliced in half
- 2 slices multigrain bread
- Butter, for spreading
Instructions
- Butter the outside layers of both slices of bread.
- Heat a frying pan over medium heat. Place one slice, buttered side down, in the pan.
- Layer the mozzarella cheese, sliced tomatoes, and avocado on top of the bread in the pan.
- Place the other slice of bread on top, buttered side up.
- Cook for a few minutes until the bottom slice is golden brown.
- Carefully flip the sandwich and cook until the other side is golden and the cheese is melted.
- Remove from the pan, slice in half if desired, and serve immediately.
Notes
Use sourdough or sprouted grain bread for extra texture. Add arugula or pesto for variation.
