Autumn Pumpkin Spice Crumble Cake

For the Crust:

  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 cup brown sugar
  • 1/4 cup cold butter, cubed
  • 1/2 cup chopped pecans

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and grease a 9-inch square baking pan.
  2. In a large bowl, mix pumpkin puree, oil, eggs, and granulated sugar until smooth.
  3. In another bowl, whisk flour, baking soda, salt, cinnamon, nutmeg, and cloves. Gradually add to wet ingredients, mixing until just combined.
  4. Pour batter into prepared pan. In a small bowl, combine brown sugar, cold butter, and pecans to make crumble topping. Sprinkle evenly over batter.
  5. Bake for 30-35 minutes or until a toothpick inserted comes out clean. Cool before serving.
