			For the Crust:
- 1 cup canned pumpkin puree
- 1/2 cup vegetable oil
- 2 large eggs
- 1 cup granulated sugar
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/2 cup brown sugar
- 1/4 cup cold butter, cubed
- 1/2 cup chopped pecans
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and grease a 9-inch square baking pan.
- In a large bowl, mix pumpkin puree, oil, eggs, and granulated sugar until smooth.
- In another bowl, whisk flour, baking soda, salt, cinnamon, nutmeg, and cloves. Gradually add to wet ingredients, mixing until just combined.
- Pour batter into prepared pan. In a small bowl, combine brown sugar, cold butter, and pecans to make crumble topping. Sprinkle evenly over batter.
- Bake for 30-35 minutes or until a toothpick inserted comes out clean. Cool before serving.
