Autumn Pumpkin Spice Crumble Cake

For the Crust:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup canned pumpkin puree
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tsp pumpkin pie spice
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chopped pecans

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and grease a 9-inch square baking pan.
  2. In a large bowl, mix flour, granulated sugar, brown sugar, pumpkin pie spice, baking powder, baking soda, and salt.
  3. Add pumpkin puree, melted butter, eggs, and vanilla extract. Stir until just combined.
  4. Pour batter into prepared pan. Sprinkle chopped pecans evenly over the top.
  5. Bake for 30-35 minutes or until a toothpick inserted comes out clean. Cool before serving.
