Soft, fluffy cinnamon rolls stuffed with a gooey apple pie filling made from cooked apples, brown sugar, cinnamon, and cornstarch, combining the best of apple pie and cinnamon rolls in one delicious treat.

  • Total Time: 1 hr 30 mins
  • Yield: 12 1x

Ingredients

Scale
  • 500 g all-purpose flour
  • 1½ tsp salt
  • 2¼ tsp instant dry yeast
  • 120 g sugar
  • 240 ml lukewarm milk
  • 60 g unsalted melted butter, cooled to room temperature
  • 1 egg at room temperature
  • ½ tsp vanilla extract or essence
  • 900 g apples (Pink Lady, Fuji, or Royal Gala preferred)
  • 60 g unsalted butter
  • 170 g brown sugar
  • 1 tbsp ground cinnamon
  • 1 tbsp cornstarch
  • ¼ tsp salt
  • 2 tbsp water

Instructions

  1. Make the dough by mixing flour, salt, yeast, sugar, lukewarm milk, melted butter, egg, and vanilla extract in a bowl with minimal kneading until smooth.
  2. Peel and cut apples, then cook them with butter, brown sugar, cinnamon, cornstarch, salt, and water until thickened to create the apple pie filling. Let cool.
  3. Roll out the dough into a rectangle, spread the cooled apple filling evenly over the dough.
  4. Roll the dough tightly into a spiral and cut into individual rolls.
  5. Place rolls in a greased baking dish and let rise until doubled in size.
  6. Bake in a preheated oven until golden brown and cooked through.
  7. Optionally, glaze or frost the rolls after baking as desired.

Notes

For best results, use tart and sweet apple varieties like Pink Lady or Fuji. The filling should be cooled before spreading to prevent dough sogginess. These rolls can be prepared the night before and baked fresh in the morning for a perfect breakfast treat.
