Apple Pecan Cake With Caramel Glaze

For the Crust:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 3 cups peeled and diced apples
  • 1 cup chopped pecans
  • 1/2 cup unsalted butter
  • 1/2 cup brown sugar
  • 1/4 cup heavy cream
  • 1/2 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a large bowl, whisk together flour, sugar, baking soda, cinnamon, and salt.
  3. Add eggs, oil, and vanilla extract to the dry ingredients. Mix until well combined.
  4. Fold in diced apples and chopped pecans. Pour batter into the prepared pan.
  5. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  6. While the cake cools, prepare the caramel glaze: Melt butter in a saucepan over medium heat. Stir in brown sugar and heavy cream. Bring to a boil, then reduce heat and simmer for 2 minutes. Remove from heat and stir in vanilla.
  7. Drizzle warm caramel glaze over the cooled cake. Let set before serving.
