Apple Pecan Cake With Caramel Glaze

A moist and flavorful cake loaded with fresh apples and crunchy pecans, topped with a rich caramel glaze.

For the Crust:

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 2 cups peeled and diced apples
  • 1 cup chopped pecans
  • 1 cup brown sugar
  • 1/4 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. In a large bowl, cream together butter and granulated sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  4. Gradually mix in the dry ingredients alternating with buttermilk, beginning and ending with dry ingredients. Fold in apples and pecans.
  5. Pour batter into prepared pan and bake for 30-35 minutes, or until a toothpick inserted comes out clean. Cool in pan for 10 minutes, then transfer to a wire rack.
  6. For the glaze, combine brown sugar, cream, and butter in a saucepan over medium heat. Bring to a boil, stirring constantly, then remove from heat and stir in vanilla. Drizzle over warm cake.
