For the Crust:
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tbsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 2/3 cup milk
- 2 large eggs
- 1 tsp vanilla extract
- 2 cups diced apples (peeled and cored)
- Vegetable oil for frying
- 1/2 cup powdered sugar (for glaze)
Instructions
1. Prepare the Crust:
- In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
- In another bowl, mix milk, eggs, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the diced apples until evenly distributed in the batter.
- Heat vegetable oil in a deep pan to 350°F (175°C).
- Drop tablespoon-sized portions of the batter into the hot oil. Fry for 2-3 minutes per side until golden brown.
- Remove with a slotted spoon and drain on paper towels.
- While still warm, dust the fritter bites with powdered sugar or drizzle with a simple glaze.
