Apple Coffee Cake with Cream Cheese Filling

For the Crust:

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 2 medium apples, peeled and diced
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 egg yolk
  • 1/2 tsp cinnamon
  • 1/4 cup brown sugar (for topping)
  • 1/4 cup chopped walnuts (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, beat butter and sugar until light. Add eggs, vanilla, and sour cream, mixing well.
  4. Gradually add dry ingredients to wet ingredients, mixing until just combined. Fold in diced apples.
  5. In a separate bowl, beat cream cheese, sugar, egg yolk, and cinnamon until smooth.
  6. Spread half the cake batter in the pan. Spoon cream cheese mixture over batter, then top with remaining batter.
  7. Sprinkle brown sugar and walnuts (if using) on top. Bake for 45-50 minutes or until a toothpick comes out clean.
  8. Cool in pan for 15 minutes before removing. Serve warm or at room temperature.
