Apple Cinnamon Swirl Loaf

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 2 medium apples, peeled, cored, and diced

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  3. In a separate large bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Gradually add the flour mixture to the wet ingredients, alternating with the sour cream, until just combined. Fold in the diced apples.
  5. Pour half of the batter into the prepared loaf pan and spread it evenly.
  6. In a small bowl, mix 1/4 cup of granulated sugar and 1 teaspoon of cinnamon. Sprinkle half of this cinnamon sugar mixture over the batter in the pan.
  7. Pour the remaining batter over the cinnamon sugar layer and spread it evenly. Top with the rest of the cinnamon sugar mixture.
  8. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean. Let the loaf cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
