For the Crust:
- 1 cup graham cracker crumbs
- 3 tbsp melted butter
- 2 tbsp granulated sugar
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup finely chopped apples
- 1 tsp ground cinnamon
- 2 tbsp brown sugar
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F. Line muffin tin with liners. Mix graham crumbs, melted butter, and sugar. Press into bottoms of liners.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla. Spoon over crusts.
- Toss apples with cinnamon and brown sugar. Drop spoonfuls onto cheesecake batter. Swirl gently with knife.
- Bake 20-25 minutes until set. Cool completely, then refrigerate at least 2 hours before serving.
