Apple Cinnamon Cheesecake Cupcakes

Delicious mini cheesecakes with a spiced apple topping, perfect for fall.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 medium apples, peeled and diced
  • 1 tbsp lemon juice
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp nutmeg

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F. Line a muffin tin with cupcake liners.
  2. Mix graham cracker crumbs and melted butter. Press 1 tbsp into each liner to form crust.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla. Spoon over crusts.
  4. Toss apples with lemon juice, brown sugar, cinnamon, and nutmeg. Top each cupcake with apple mixture.
  5. Bake for 20-25 minutes until set. Cool completely before serving.

Notes

You can customize the seasonings to taste.
