Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and powdered sugar until mostly incorporated.
- Add the egg and vanilla extract, mixing well.
- In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the butter mixture in two parts, mixing until fully incorporated.
- Add the apple cider and mix until the dough is soft and easy to handle.
- Use an ice cream scoop to portion the dough into equal-sized balls and press them into cookie shapes.
- Place cookies on a baking sheet and bake for 10-12 minutes, rotating halfway through, until edges are lightly golden.
- Allow cookies to cool on the baking sheet before transferring to a wire rack.
Notes
Chilling the dough for 1-2 hours before baking helps achieve perfectly round cookies, but it is not necessary. The cookies are best enjoyed soft and slightly golden on the edges. Powdered sugar contributes to a tender texture.
