7UP Pound Cake

A moist and tender pound cake with a subtle citrus flavor from 7UP soda.

For the Crust:

  • 3 cups all-purpose flour
  • 3 cups granulated sugar
  • 1 1/2 cups (3 sticks) unsalted butter, softened
  • 5 large eggs
  • 3/4 cup 7UP soda
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon extract
  • 1/2 teaspoon salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Grease and flour a 10-inch Bundt pan.
  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition.
  4. Mix in flour and salt alternately with 7UP, beginning and ending with flour.
  5. Stir in vanilla and lemon extracts until well combined.
  6. Pour batter into prepared pan and bake for 60-70 minutes or until a toothpick inserted comes out clean.
  7. Cool in pan for 15 minutes, then invert onto a wire rack to cool completely.

You can customize the seasonings to taste.
