Instructions

  1. Preheat oven to 425°F (220°C) and line a large sheet pan with parchment paper.
  2. In a large bowl, toss the potatoes with 2 tablespoons of olive oil, salt, and pepper. Spread onto the sheet pan.
  3. Roast the potatoes alone for 10 minutes to give them a head start.
  4. Meanwhile, toss the sausage, bell peppers, and red onion with the remaining olive oil, salt, and pepper.
  5. Remove the pan from the oven, add the sausage and vegetable mixture, and spread everything into a single layer.
  6. Roast for another 20-25 minutes, stirring once halfway through, until the potatoes are fork-tender and the sausage is browned at the edges.
